Chinese New Year cupcakes

Happy Chinese New Year! 
This year is the year of the sheep. I made some fun cupcakes for a Chinese New Year party I'm attending. I think they turned out pretty adorable! 
These are fruit cake cupcakes. White cake (sometimes angle food cake, but I use my go-to vanilla cake recipe). Topped with a heavy whipping cream frosting. Which is just heavy whipping cream whipped until it thickens, and powdered sugar to your preferred sweetness.
I wrote sheep (or goat) in Chinese with melted chocolate, froze it, then used it as a cupcake topper along with mandarin oranges and strawberries
 The sheep's face is fondant, and the body is marshmallows. Super easy, and super cute!

Chocolate Haupia Pie



Aloha!! I am excited to share this AMAZING recipe for Hawaiian Haupia Pie. Haupia means coconut in Hawaiian, but don't let that deter you from making this delicious dessert. Even those who despise coconut (how could anyone ever hate the coconut?) love this pie. It's that good!!

Triple Peanut Butter Chocolate Ganache Cake

You can't go wrong with a chocolate & peanut butter. I wanted a cake that taste like a delicious version of a peanut butter cup. This was made using my go-to vanilla cake recipe, but I added 1/4 cup creamy peanut butter to the batter. I used peanut butter cups and a peanut butter mousse for the filling using a recipe I found on pinterest PEANUT BUTTER MOUSSE. I sweetened my mousse with half powdered sugar and half agave. The recipe uses coconut cream, I love coconut, but when I tasted the final product, I thought the coconut flavor was going to be a little overwhelming in my cake. I decided to go for it, and it actually worked perfectly. There wasn't a strong coconut flavor at all! YEAH!
The whole cake was covered in GANACHE, with some melting off the sides. Topped with more mousse and cups. 
Peanut butter cake, peanut butter mousse, and peanut butter cups. The ganache is so rich that the triple peanut butter combination works perfectly to balance the flavors! 
This cake was absolutely delicious!

Vegan No Bake Chocolate Peanut Butter Cookies

I love me a good cookie.
Good cookies love me (they won't leave my thighs)
These cookies are easy, fast, delicious, and healthy (fine they're not healthy, but I pretend that they are).
These cookies are also vegan, gluten free, and best of all homemade with no artificial ingredients (I didn't make that up).
Here is what you will need
-2/3 Cup REAL maple syrup (I don't mean Ms. Butters high fructose corn syrup)
-1/2 Cup cocoa powder
-1/4 Cup coconut oil
-1/2 tsp cinnamon
-1/2 tsp salt
-1 tsp vanilla
-1/2 Cup peanut butter
-2 Cups rolled oats

Bring syrup, cocoa powder, & coconut oil to boil in medium saucepan. Stir for 2 minutes. Add remaining ingredients. Mix well. Place on cookie sheets lines with parchment (or wax) paper. Refrigerate for 30 min (or until you're ready to eat)
